Blue Cheese Dressing

For this version, we’re going beyond the age-old triple threat of mayo, sour cream, and buttermilk and diving deep into the nuanced tangs of three more ingredients: lemon, Dijon, and MSG. Worry not—if you have a fear of trying new things, you can omit these additions for a more bare-bones creamy goodness. But until you taste it, you won’t know what you’re missing. Lemon zest provides brightness while lemon juice gives balance to the richness with a taming acidity. Dijon mustard adds a subtle layer of richness—like one would find in more aged cheeses—without adding actual fat. MSG adds umami-rich tangy saltiness that is reminiscent of ranch dressing.
